Because Sabine is a fan of the two; as she was once a bounty hunter, I'm sure they were "heroic" figures she admired.

Jango is ignored by the fanbase, too. The guy killed Jedi Master Coleman Trebor with a single shot, and yet he's still overshadowed by his cloned son.
The legends version of Jango was one of the most impressive non force sensitive characters seen. He defeated a group of Jedi led by former Jedi Master Dooku, in unarmed combat. He literally killed multiple Jedi with his bare hands. In legends Boba Fett also had some great feats but nothing I've seen beats this.
