Why?
Well, personally for me TCW is hands down infinitely better than Rebels. I never was a fan of Rebels, and the only parts in the show that I actually found enjoyable were too few for me to say that I liked the series in general.
The Cosmonaut Variety Hour says pretty much all the same things I would about Rebels in his video, even if I do disagree with him on one or two issues (not to mention on some of his opinions on Star Wars outside of Rebels), but for the most part, he lays out what I also view as the main problems with the show.

Aside from the animation being worse, Rebels episodes felt like the “mission of the week” rather than a story, like TCW.
The animation on Rebels is lot more advanced than TCW ever was. Darth Vader’s billowing cape, for example, would have been impossible with TCW’s models and rigging.
The team also did a lot more particle simulation on Rebels, and most objects are smoothly contoured. Skin texture is also far more lifelike.
This is in stark contrast to TCW, where pretty much everything was made of blocky polygons with plastic-looking shaders.
TCW took way too long to get good (like 2 seasons, while there are a couple great eps buried in there), IMHO, whereas Rebels started off with a bang, lagged a bit in S1, but was more consistently good to great after that. Also the difference between Rebels having a predetermined end point and place in the canon whereas TCW, when it aired, just existed.
Also, no Jar Jar or pointless Droid episodes in Rebels.

I really liked The Clone Wars (as I grew up with the show and watched it as it aired) because I've always been really into the show diving into the ordinary clone's life, presenting life during the war.
Rebels for me. The Clone Wars never got me to care too much for the new characters it created early on. It felt like it was using my previously established love for old characters to try to get me invested, but it floundered for way too long, imo. Early seasons did feel like a sanitized presentation of the prequel trilogy for me.
Thankfully it got better. But I don't think I ever really felt like it was a must-watch, even to this day when I watch it just for the sake of catching up.
Were the bits of lore they set up fascinating? Yeah. But I feel like other mediums and storylines used those setups and lore in Clone Wars better than the show did. I think Son of Dathromir's story came off way more brutal and intense in comic form than it would have with the animation in Clone Wars.
Which is a shame, because I really loved Genndy Tartakovsky's Clone Wars miniseries.
As for Rebels, I think it hit the ground running. The fact that we were following one set of (brand-new) characters instead of flipping between different sets of people every three eps in The Clone Wars was an advantage.
They were able to bring in something new without too much expectation from my part while at the same time just giving enough callbacks and cameos/guest roles that were short and sweet. And yeah, I preferred the animation style too. I only hated exactly one character on the show(Ezra) and they were able to fix that in the course of the show.
