There are a lot of Star Wars characters that exhibit some... interesting traits throughout their time in the galaxy. It could be immense luck, a strong sense of intuition, or some unusual survival skills. All of these are signs of Force-sensitivity, and some characters have one or more of them, yet aren't considered Force-sensitive by the plot and the various guide books of canon and Legends.
I like to call those characters "Hidden Force-sensitives", and there is a fair amount of them, if you look carefully.
The most famous example of a "Hidden Force-sensitive" is definitely Han Solo, which managed to shoot down Darth Vader - one of the finest pilot in A New Hope, percisely when Luke needed immediate saving.
Another good example of a "Hidden Force-sensitive" in my opinion is Din Djarin, aka, the legendary Mandalorian. First of all, he survived a lethal attack from a mudhorn, but I think the stronger evidence for his Force-sensitivity is his connection to Grogu. From the moment they first met, Din formed a powerful bond with the alien youngling, which in return recognised him as his sole protector and father figure. That connection is too strong to be a normal rescued-rescuer one, and Din also couldn't let him go to the Client and his experiments.
