Constable's Caps was a dish consisting of gray fungus stuffed with various fillings. The dish's name was inspired by the Kyuzo Outpost Militia of Niima Outpost on the planet Jakku,[1] who were led by a constable and wore Kyuzo war shield helmets[2] that bore a resemblance to the fungus caps used in the dish.[1] In 34 ABY,[3] the Artiodac chef Strono Tuggs included a recipe for the dish in his cookbook The Official Black Spire Outpost Cookbook.[1]
In the book, Tuggs suggested that the best place to find large fungus to use in the recipe was the fungal forests of the[1] planet[4] Skako Minor, as the mushrooms of Jakku were rarely big enough to stuff. He stated that a wide range of fillings could be used to stuff the fungus, including diced meat, mixed vegetables, or imitation killcrab. Tuggs provided a recipe using his favorite filling, which he claimed tasted spectacular.[1]
Behind the scenes[]
Constable's Caps was created as one of the recipes in the 2019 cookbook Star Wars: Galaxy's Edge: The Official Black Spire Outpost Cookbook, which was written by Marc Sumerak and Chelsea Monroe-Cassel. The out-of-universe recipe uses button mushrooms cooked with butter and minced garlic, then stuffed and further baked with a mixture of panko breadcrumbs, grated Parmesan cheese, finely chopped green onions, chopped parsley, garam masala, salt, and pepper.[1]
